BENEFITING: The Nurtured Palate
When I lost my beautiful mother Irma (pictured)at 67 years young to cancer 20 years ago, I vowed that one day I would do something to pay homage to her by helping people with cancer stay nourished and strong to fight the disease. My mother was an amazing home cook and baker and relished in seeing people eat the meals and goodies that she prepared for them, so cooking was something that made her happy. Cancer, however, made cooking and eating a chore for her as she lost her appetite due to the side-effects of the disease and its treatments. As her caretaker, I tried preparing meals that might appeal to her distorted palate and tastebuds. I would spend many hours a day cooking a variety of dishes in the hope that one of the dishes would appeal to her and not exacerbate her symptoms. Bringing food in was not a good option either because the one time I did this, she became violently ill from the food.
People with cancer face severe food challenges the result of which often lead to cachexia, or malnourishment, i.e. wasting away from not eating. Our organic, nutrient-dense meals rekindle appetites in those whose palates have been distorted due to cancer and treatments, so eating becomes a more pleasurable and nourshing experience.
