Why I created Spin For Celiac:
My sister, Rachel, was diagnosed with Celiac Disease when she was 5 years old, and has lived with the disease for 9 years. She's not the only one; in the United States, as many as 3 million people have Celiac Disease, and as high as 80% of that number remain undiagnosed. This autoimmune disease means your body reacts to gluten like poison and there are severe long-term health issues as a result. Rachel is one of the most special people in my life, so when I came up with the idea for my Grad Challenge, I wanted to connect my love for my sister, with my pride in my community's amazing array of gluten-free products, as well as my interest in a career in medicine.
