Dear Community - As some of you may know, I live with Celiac disease and Type 1 diabetes and have been passionate for a decade about the healing potential of whole food eating. I am extremely privileged to have had amazing health care and access to healthy food that has allowed me to thrive. Because of this, in under two years, I have gone from having undiagnosed diabetes, to running a half marathon. New York has granted me so many opportunities to live a healthy life with access to resources, but it also has the highest food inequality in America. Brooklyn in particular is renowned for the gap in food access. In one borough you can find a plethora of farmer's markets and some of the most innovative farm to table restaurants, and yet, the next neighborhood over is essentially a food dessert. There is also a massive lack of education around healthy eating, as I have encountered in participating in community programs where I have witnessed borough neighbors eating cornstarch as an afternoon snack for it's accessibility, high calories and price. What's not understood is that with some cooking skills, affordable whole foods can be substituted for these high calorie options, preventing chronic illness and a creating more productive healthy life. I have tried over the years to donate my time to several causes around the city, but none have been more meaningful to me than the work of the Sylvia Center. The Sylvia Center is an amazing organization working at the nexus of health, sustainability and social justice with the mission to inspire young people and their families to establish independent healthy eating habits — so that they may lead healthy and productive lives. What has allowed me to thrive is being made accessible to those in my community through their programs. My goal is to sponsor twenty students for six weeks of cooking classes in NYC. I have volunteered for their classes before and they provide a fun, productive, and community building opportunity for these kids that most importantly gives them incredible life skills.
