The stay-at-home order caused the cancellation of AutismUp's Gala & recent celebrity fundraiser. So, what what do you do when life gives you lemons? Gather some friends & put a "lime twist" on it!

10 medium sized tomatoes
1/2 red onion
1/2 cup cilantro
salt & pepper
Cut the tomatoes into large chunks.
Cut the onion into medium to small pieces
Cut the jalapeno into small pieces (remove the core if you want less heat)
Loosely dice the cilantro
Add the ingredients to the food processor.
Add lime juice, cumin, salt, pepper.
Pulse to combine. For chunkier salsa, only pulse a few times.
For smoother salsa, pulse a few more times. (I prefer it chunky!)
**NOTE** Everyone likes their salsa a little different, so taste test while it is still in the food processor. Needs more cumin? Maybe a bit more salt? If you want a brighter salsa you can add corn. If it needs more heat, go with cayenne pepper.
